The Pilot's Seat (パイロットのいす?, lit.: "Pilot's Chair") is a ship part in Pikmin. The Pilot's Seat will make the Dolphin's cockpit complete when Olimar installs it. It is actually a cushion for comfort, but despite that, it is still a mandatory part.
The Pilot's Seat reappears as a ship part in Olimar's Shipwreck Tale in Pikmin 4. It is found inside a safe in the Hero's Hideaway.
Once installed, the ship part is not visible on the S.S. Dolphin.
Collecting the part

In Pikmin
This piece is located on a stump, the one to the farther left. Defeat any Bulbears and Swooping Snitchbugs that may be an annoyance. Defeating the Shearwigs and Yellow Wollywogs in the area will also be helpful. Assuming they take the eastern path back to the Dolphin, Blue Pikmin will carry the part through a shortcut in the water, thus avoiding the three sleeping Bulbears on the way. It is where the Glutton's Kitchen is located in Pikmin 2.
In Pikmin 4
Moss is recommended for recovering this part. Dig a tunnel to the kitchen countertop in the western part of the area. From there, go past the sink on the right (or swim over it with Moss). Break down the electric gate and proceed left. A hovering platform will take you to an open safe containing the Pilot's Seat.
Unfortunately there is also a Miniature Snootwhacker near the safe, which should preferably be killed by a rush followed by Pikmin attacks. If you did not bring Moss here, use an item such as a bomb rock or Ice Blast to either kill the enemy or stun it while your Pikmin carry the part; an Ice Blast is hidden in an alcove on the desk you came from. As a last resort, you can try to distract the Miniature Snootwhacker with Olimar.
Incidentally, the safe containing the part is the same one which Olimar uses as a bunker in the main story, hiding the entrance to Leafy Showdown inside.
Notes
Olimar's monologs
“At last! My Pilot's Seat!
Once I get this installed, my cockpit will finally be back in order. Soon, my ship will be starting to look more and more like the Dolphin of old. Ah, the memories...
Picturing this in the cockpit, images of me lifting off into space begin to fill my taxed brain. It fills me with inspiration once again!”
