I know why olimar's weight varies in the games! In pikmin 1 he weighs his normal weight. In pikmin 2 he's lighter because he hasn't eaten much in the first game so he lost weight. In pikmin 3 he gained the weight back because after pikmin 2 he was able to eat again...
